Commercial methods

From boat to bench

Blue swimmers are taken in baited pots set on sandy bay floors and tidal estuaries. The crabs are landed live, graded for size and condition, and kept in cool seawater tanks until processed — guaranteeing the meat stays sweet and firm.

Health benefit

Lean source of protein, copper and omega-3s with very little saturated fat.

Easy Recipe

Chilli Blue Swimmer Spaghetti

Serves 4·25 minutes

Ingredients

  • 400g spaghetti
  • Meat from 2 cooked blue swimmer crabs
  • 2 garlic cloves, sliced
  • 1 long red chilli, finely chopped
  • Olive oil, lemon, parsley

Method

  1. 01Cook spaghetti in well-salted water until al dente.
  2. 02Gently warm garlic and chilli in olive oil — don't colour.
  3. 03Add crab meat and a splash of pasta water, swirl to a light sauce.
  4. 04Toss through the pasta with lemon and parsley; serve immediately.
