From boat to bench

Gummy shark are a sustainably managed species taken by licensed long-line vessels in Bass Strait. Lines are set on the seabed, soaked for short periods, then hauled — fish are bled, dressed and chilled at sea, ready for filleting on shore.

Lean, low-mercury protein rich in niacin and vitamin B12.

Easy Recipe

Beer-Battered Flake with Hand-Cut Chips & Slaw

Serves 4·40 minutes

Ingredients

  • 600g flake fillet, cut into strips
  • 1 cup plain flour, 1 tsp baking powder, 1 cup cold lager
  • Oil for deep frying, salt and lemon
  • 6 large potatoes, cut into thick chips
  • 1/4 white cabbage, finely shredded
  • 1 carrot, grated
  • 2 tbsp whole-egg mayonnaise, 1 tbsp apple cider vinegar
  • Pinch of sugar, salt and pepper

Method

  1. 01Soak chips in cold water 10 minutes, dry well, then fry at 140°C for 6 minutes; lift and rest.
  2. 02Toss cabbage and carrot with mayo, vinegar, sugar, salt and pepper for the slaw.
  3. 03Whisk flour, baking powder and beer to a smooth batter.
  4. 04Bring oil to 180°C and return the chips for 3–4 minutes until golden and crisp; drain and salt.
  5. 05Dip flake in batter, fry 4–5 minutes until golden, then drain and salt.
  6. 06Pile flake, chips and slaw on the plate with lemon wedges.
