Commercial methods

From boat to bench

Mirror dory live in deep cool water along the continental shelf and are taken by quota-managed trawlers off southern New South Wales and eastern Victoria. The catch is sorted and chilled at sea, then filleted dockside to keep the flesh pristine white.

Health benefit

Lean white-fleshed fish high in protein and B vitamins with minimal fat.

Easy Recipe

Pan-Fried Dory with Brown Butter, Capers, Mash & Peas

Serves 2·30 minutes

Ingredients

  • 2 mirror dory fillets
  • Plain flour for dusting
  • 60g butter, 1 tbsp capers, lemon and parsley
  • 500g potatoes, peeled and chopped
  • 40g butter, 60ml warm milk (for mash)
  • 1.5 cups frozen peas
  • Knob of butter, splash of cream, mint leaves

Method

  1. 01Boil potatoes until tender, drain, then mash with butter and warm milk; season.
  2. 02Simmer peas 2 minutes, drain and crush lightly with butter, cream and torn mint.
  3. 03Dust fillets in seasoned flour.
  4. 04Melt half the butter in a hot pan and fry the fish 2 minutes each side.
  5. 05Lift the fish, add remaining butter and let it foam and brown.
  6. 06Stir in capers and lemon, pour over the fish and serve on the mash with crushed peas alongside.
