Stargazer sit half-buried on the seabed waiting for prey. They're brought up by demersal trawlers across the southern shelf and individually graded — the thick, boneless tail loins are prized by chefs for their firm, sweet flesh.
Firm, lean white flesh rich in protein, selenium and B vitamins.
